#1. Aldi Recipe for Healthy Pancakes

This recipe for healthy pancakes from Aldi uses semi-skimmed milk, without losing the flavour or texture of a great pancake.

Ingredients (makes approx 8 pancakes)

  • 100g The Pantry Plain Flour
  • 1 Medium Egg
  • 300ml Semi Skimmed Milk
  • Pinch of Salt
  • Sunflower Oil

Method

  1. Beat the egg and the milk along with the salt.
  2. Sift the flour into a bowl
  3. Create a well in the centre of the flour and slowly whisk in the egg and milk mixture, until smooth
  4. Set aside for 20 minutes
  5. Using kitchen roll, rub the base of your frying pan with sunflower oil.
  6. Place your frying pan on a medium heat.
  7. Pour on batter, enough to just cover the base, cook for 30 seconds until browned on base
  8. Flip and brown on the other side. Get the kids involved if they are old enough!
  9. Repeat until all the batter has been used

If you wish to make the batter in advance, it will keep in a fridge for up to 2 days, in a sealed container. Or you could make the pancakes in advance and reheat in a warm over, wrapped in tin foil. Again they will keep for 2 days in the fridge.

#2. Healthy Porridge Pancake Recipe

This recipe for healthy pancakes made with porridge and buttermilk really benefits from sitting overnight. So make it up the day before you wish to use it if you can. If this is not possible, add a half a teaspoon of baking soda to the batter before you use it.

Ingredients (makes approx. 6 pancakes)

  • 50g plain flour
  • 30g rolled oats
  • 1 medium egg
  • 60ml buttermilk
  • Pinch of salt
  • 1 tablespoon of sunflower oil (or similar) for frying

Method

  1. Add flour, oats, egg, buttermilk and salt to a jar, with a tight fitting lid (an old jam jar is ideal)
  2. Shake it up well and leave in the fridge overnight to ferment. (or add half a teaspoon of baking powder if using right away). Don’t worry about lumps, they will work out overnight or use a fork to break them down.
  3. To cook your pancakes, add a few drops of sunflower oil to a pan and spread with kitchen roll.
  4. Give the batter a final shake and add your batter in batches and cook on a medium heat until browned both sides and flips easily!
  5. Continue until all the batter is used and decorate with healthy toppings.

#3. Healthy Egg Free Pancake Recipe

These pancakes not only taste great but are ideal for anyone who has an allergy to eggs.

Ingredients (makes approx. 9 pancakes)

• 150g self raising flour
• tsp bicarbonate of soda
• 250ml skimmed milk
• 2 tbsp rapeseed / sunflower oil

Method

  1. Sift the flour and bicarbonate of soda into a mixing bowl.
  2. Add your milk and oil and give the batter a quick mix with a whisk.
  3. Pour onto a hot greased pan or griddle and cook to your liking.
  4. Add your favourite toppings.

#4. Recipe for Healthy Gluten Free Pancakes

Supplementing bananas for flour creates a very healthy pancake batter but is also handy if anyone in the family has a gluten intolerance.

Ingredients (makes approx. 6 pancakes)

• 150ml milk
• 1 egg
• 15g melted butter
• 2 bananas

Method :

  1. Mash your bananas in a mixing bowl. Mash them well to get rid of as many lumps as possible.
  2. Mix your milk, egg and melted butter together and give it a quick mix with a whisk.
  3. Pour wet mixture onto the bananas and whisk thoroughly
  4. Use the mixture right away or it will brown and cook on a greased pan or griddle to your liking.
  5. Add toppings and enjoy.

#5. Lemon, Blueberry Quinoa Pancakes

I love this recipe for healthy pancakes from Ambitious Kitchen. They are fluffy on the inside and bursting with goodness.

Ingredients (makes 9 pancakes)

  • 225g quinoa (cooked)
  • 100g flour (white whole wheat)
  • 2 teaspoons baking powder
  • 3 large egg whites
  • 75g low fat natuarl yoghurt
  • 2 tablespoons milk (any will do)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
  • 150g blueberries
  • Pinch of salt

Method

  1. Add the cooked quinoa, flour, baking powder and salt to a bowl.
  2. Whisk the egg whites with the milk, yoghurt and honey until smooth.
  3. Add to the dry ingredients and whisk to combine
  4. Add lemon juice and vanilla extract and whisk
  5. Fold in the blueberries
  6. Cook each pancake on a lightly greased pan over a medium heat for about 2 minutes each side.
  7. Serve on their own or with a healthy topping
