Mykidstime Maura asked earlier “Can Catherine suggest any good recipes for one pot in the oven type of dinner, we are a bit fed up of shepherds pie or lasagne so looking for some new ideas?”
Kim Casserole. Put diced beef potatoes + veg of choice into a dish with oxtail soup, cover with tin foil for around 1.5 hours. Stir every half hour. I prefer to brown the beef in a pan 1st but not neccessary:)
Catherine Fulvio At this time of the year one of the Fulvio family favs is Butternut Squash and Beef Casserole. I’ll pop the recipe up tomorrow on my page and you can let me know what you think. Alternatively a Thai Curry is always a tasty one pot dish and nice alternative to the usual flavours mentioned above. C
Lisa pasta bake is really quick and easy to do all in the one dish or maybe chicken/beef or sausage casserole, specially now its in winter
Catherine Fulvio Yes Lisa Pasta Bakes are quick and easy and a great way to use up leftover from the Sunday Roast! C
Tracy  i get gigot chops, throw in pots and veg and cook all at once, i chop pots into cube sized and part boil them
Jan  i do lamb gigot chop casserole in the slow cooker, supposed to be chunks of lamb but i prefer the flavour from meat on the bone, or chicken casserole in the slow cooker, totally yummy x

Lèon Any suggestions for a nice easy food for adults at a kids party party?
Catherine Fulvio You mustn’t have been watching the show last Friday, I did Vietnamese Beef Salad with Ginger & Lime Dressingfor the adults at my daughter’s bday party. I have had loads of feedback on this one, it’s delish and the recipe is up on the RTE food website.
Catherine Fulvio Or you could do a lovely slow cooked Tagine which gives off beautiful aromas served with cous cous. Any leftovers will be just as delicious the next day. Tagine are very popular at the moment too.

Mykidstime Linda asks if Catherine has an easy basic soup recipe?
Sharon i have. i lge butternut squash, peeled & cubed. one lge onion, 1 lgr red pepper, 1 pt chicken or veg stock, salt & pepper, good teaspoon of tarragon. all into a pot, top up with water, bring to boil, simmer, blend, serve. Fab
Catherine Fulvio There’s a whole chapter on Soups & Starters in my new book and I think they are all quite easy… I try to make my recipes as do-able as possible, but the easiest of them all has to be the Tomato Soup in new book. If I get time during the session I’ll pop up the recipe Linda. If not will put it after C
Lisa peas, carrots, onion, leeks, garlic, salt, pepper and vegetable stock just blended all together
Catherine Fulvio AND here it is: Tomato Soup – Just heat a large saucepan over a medium heat. Add some olive oil, garlic and 2/3 sundried tomatoes, reduce the heat to low and sauté for 1 minute. Then stir in a tin of tomatoes, 1 good sized potato peeled & chopped and 300ml of veg stock and bring to the boil. Reduce the heat and simmer for 10–15 minutes, until the potato is cooked through. Add in the basil and remove from the heat. Then just purée the soup and taste for seasoning, add more stock to thin if nec.
Eva  My friend Fiona gave me this one-
1 leek chopped
1 head of celery chopped
1 bag of carrots
2 chicken stock cubes
Salt n pepper
Bring to the boil, then simmer, then blend, it’s beautiful and best of all it’s a free soup for anyone watching their waistline.

Carol Hi Catherine, i love using the slow cooker but have run out of ideas… do you have a recipe for the slow cooker?
Catherine Fulvio You must have been reading my mind Carol, I just mentioned a slow cook Tagine below or you could always go for a traditional Beef & Stout Stew. I have a recipe for it too which you can get off RTE Food website later this week. C

Mykidstime Aine emailed to ask “what would Catherine recommend as the top 5 store cupboard ingredients for rustling up a dinner at short notice?”
Catherine Fulvio Store Cupboard staples well if you have Risotto rice, Pasta/ Egg Noodles, tinned tomatoes, Thai red Curry Paste & Thai Fish Sauce for seasoning any Asian Dish you should be safely covered. But for a quick and easy meal in minutes I’d go Baked Egg & Chorizo myself!

Karen Hi Catherine, the tomato soup recipe looks great, will definitely try it. Would you pre roast tomaotes for a basic tomato sauce?
Mykidstime And may I add: is it worth the effort to take skins off tomatoes before using them?
Catherine Fulvio Yes – that’s a great idea, roasting the tomatoes really brings out the flavour and sweetness
Catherine Fulvio With regard to removing the skins it’s personal taste yes it’s worth the effort but time consuming. You can take a shortcut and buy a jar of Passata or a good quality tin of tomatoes! Anything for an easy life sometimes!

Jane Does Catherine have a recipe for a Christmas Pudding suitable for someone who is diabetic and also trying to watch their cholesterol levels? :)
Catherine Fulvio No – not a specific recipe that would be suitable as Xmas pud is very rich, sweet and high in fat! It’s hard to avoid… So I suggest a wonderful tropical fruit salad for dessert – with lots of
interesting fruits such as papayas, kiwi, mango, pineapple steeped in lime and star anise syrup (made with splenda) – hope this helps. C
