Ingredients for the Basic Stock Syrup

Makes about 350ml

  • 200g caster sugar
  • 350ml water

Ingredients for Flavouring

Choose one of the following:

  • 4 large, washed sprigs of rosemary
  • 1 washed, bruised lemongrass stalk
  • 10 organic rose petals
  • 3 washed sweet geranium leaves (note: this flavour can be fairly strong)

Method

1. To make the basic stock syrup, add the sugar to a medium saucepan and pour over the water. Bring to the boil.

2. Reduce the heat and simmer for about 6 minutes, until a light syrup forms.

3. While the syrup is still hot, add the flavouring of your choice and leave it to cool completely so it can infuse.

4. Pour the syrup through a sieve into a jug or sterilised jar and seal.

5. The syrup will keep in the fridge for up to 3 weeks.

FAQs

How long do herb-infused syrups keep?

Stored in a sealed, sterilised jar in the fridge, these syrups will keep for up to 3 weeks.

Can I use dried herbs instead of fresh?

Fresh herbs give the best flavour and are what these recipes are designed for. If you only have dried herbs, use a smaller amount, as dried herbs are more concentrated, and expect a slightly different flavour.

What can I use herb-infused syrup for?

It’s very versatile — try it as a cordial mixed with water for the kids, drizzled over ice-cream or fruit salad, stirred into sparkling water, or added to a drink when you’re entertaining.

Which flavour is best for beginners?

Rosemary and lemongrass are gentle, easy starting points. Sweet geranium has a much stronger flavour, so start with a small amount if you’re trying it for the first time.
