Try a Classic With Deirdre Madden’s Delicious Country Apple Cake

I went old-school for dessert this Sunday and opened my ancient edition of Deirdre Madden’s All About Home Economics, which was my school book for Leaving Cert Home Economics back in the day! It has experienced a revival of late when Deirdre Madden’s daughters reproduced the book recently.

I ended up using a 2lb loaf tin and we ate with custard instead! Yum yum, big hit all round.

Country Apple Cake Recipe

Ingredients

  • 200g plain flour
  • 1/8 tsp salt
  • 1 tsp baking powder
  • 1/8 tsp ground cloves/cinnamon (I used mixed spice)
  • 75g butter, diced
  • 50g caster sugar
  • 1 egg
  • 2 large apples
  • 1-2 tsp milk if required
  • Granulated sugar to sprinkle

Method

  1. Sieve flour, salt, baking powder and spice into a bowl.
  2. Rub in butter.
  3. Peel, core and chop apples finely.
  4. Beat egg and add to mixture with apples and sugar.
  5. If mix too dry, add a little milk to make a stiff dough.
  6. Put mixture into a greased sandwich tin and sprinkle granulated sugar over.
  7. Bake in a moderate oven 190 deg C for about 40 mins until golden brown.
  8. Serve hot or cold with butter.
