Ingredients for the Basic Stock Syrup
Makes about 350ml
- 200g caster sugar
- 350ml water
Ingredients for Flavouring
Choose one of the following:
- 4 large, washed sprigs of rosemary
- 1 washed, bruised lemongrass stalk
- 10 organic rose petals
- 3 washed sweet geranium leaves (note: this flavour can be fairly strong)
Method
1. To make the basic stock syrup, add the sugar to a medium saucepan and pour over the water. Bring to the boil.
2. Reduce the heat and simmer for about 6 minutes, until a light syrup forms.
3. While the syrup is still hot, add the flavouring of your choice and leave it to cool completely so it can infuse.
4. Pour the syrup through a sieve into a jug or sterilised jar and seal.
5. The syrup will keep in the fridge for up to 3 weeks.
