Pumpkin Scones Recipe

Serves 6

Ingredients:

  • 2 1/2 cups flour
  • 1/4 cup brown sugar
  • 1 tbsp baking powder
  • 3/4 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup butter (1/2 lb), cut into chunks
  • 3/4 cup pumpkin puree
  • 1/2 cup milk
  • 1 tbsp sugar, for sprinkling

Method:

1. Preheat oven to 200°C.

2. Mix flour, sugar, baking powder, cinnamon and salt in a large bowl.

3. Add the butter chunks and rub in with your fingertips until the mixture resembles breadcrumbs.

4. In another bowl, gently mix the milk and pumpkin puree. Slowly add this to the dry mix and bring together to form a dough.

5. Lightly flour a surface and knead the dough briefly, then flatten and cut into triangles (or use a cutter for round scones).

6. Sprinkle with a little sugar, then bake for 20 minutes, or until a skewer inserted into the centre comes out clean.

7. Remove to a wire rack and leave to cool slightly before serving.
