They’re sturdy enough for little hands to decorate, and they make a lovely homemade gift for teachers, grandparents or anyone else on your Christmas list.

Ingredients star cookie christmas

  • 175g softened butter
  • 125g soft brown sugar
  • 1/2 teaspoon mixed spice
  • 225g self-raising flour
  • 1 teaspoon ground cinnamon
  • Grated rind of 1 lemon
  • 50g chopped almonds
  • 25g digestive biscuits, crushed

Instructions

1. Cream the butter and sugar together until light and fluffy. Sift the flour, mixed spice and cinnamon, then stir in the lemon rind, chopped almonds and crushed biscuit crumbs. Bring the mixture together to make a firm dough.

2. On a lightly floured work surface, roll out the dough to a depth of about 8mm, then cut out the biscuits using a star-shaped cutter.

3. Line your baking trays with parchment paper and place the biscuits on top. Chill for 10 minutes, then bake at gas mark 4 (180°C/350°F) for 15–20 minutes, until golden brown.

4. Leave the biscuits on the tray for a few minutes to firm up, then transfer them to a wire rack to cool completely.

5. Store in an airtight tin — if they last that long!

6. These biscuits freeze well and make a great gift for grandparents when the kids get involved in baking and decorating them. They’re lovely iced or dusted with a little extra cinnamon for a festive finish.
