If you’ve grown (or bought) more cucumbers than you know what to do with, this cucumber pickle recipe is the answer. Pickling is a brilliant way of making the most of a glut, turning fresh cucumbers into a tangy, spiced condiment that keeps well long after the fresh vegetable would have gone soft. It’s a simple recipe, perfect for a weekend kitchen project with the kids helping with the slicing and stirring.

Ingredients

  • 4 cucumbers
  • 3 onions, peeled
  • 50g salt
  • 570ml white wine vinegar
  • 450g soft brown sugar
  • ½ level tsp ground turmeric
  • ½ level tsp ground cloves
  • 1 tbsp mustard seed

Method

1. Prepare and salt the vegetables

Slice the cucumbers and onions thinly, then layer them in a large bowl, sprinkling salt between each layer. Weigh the vegetables down with a plate and leave to stand for three hours. This draws out excess liquid and helps keep the pickle crisp. Afterwards, pour away the liquid and rinse the vegetables well.

2. Make the pickling syrup

Put the vinegar, sugar and spices into a saucepan and stir over medium heat until the sugar has fully dissolved.

3. Cook the pickle

Add the cucumber and onions to the saucepan and bring to the boil. Boil for a few minutes, then remove the vegetables with a slotted spoon and set aside. Continue boiling the syrup on its own for about 20 minutes, until it thickens slightly.

4. Jar it up

Fill sterilised jars with the cooked vegetables, then pour the hot syrup over them until covered. Seal, label with the date, and store in a cool, dark place.
