This version is a classic green pesto, but you can easily switch things up by adding a few sundried tomatoes to make a red pesto instead.

Ingredients

  • 175g/6oz fresh basil leaves
  • 225g/8oz parmesan cheese, grated
  • 55g/2oz pine nuts
  • 2 large cloves of garlic
  • 225ml/8fl oz extra virgin olive oil
  • Salt and pepper

Method

1. Place all ingredients into a blender and whizz until smooth.

2. Taste and correct the seasoning.
