These Breakfast Berry Muffins Are Sure to Be a Hit!

These bitesize berry muffins are delicious and suited to so much more than just breakfast. They’re perfect for after-school snacks, coffee mornings, lunchbox treats, or a relaxed weekend baking session with the kids. Soft, fruity and just sweet enough, they’re the kind of bake the whole family will ask for again and again.

A Brilliant Breakfast Berry Muffins Recipe

These berry muffins are great for lunchboxes and keep very well in a sealed tin. They also freeze excellently — if you have a baking day and make a big batch, simply let them cool completely before popping them into a freezer bag or tub. Take the muffins out of the freezer the night before you need them for a lunchbox, and they’ll be ready to go by morning.

Makes: 12 muffins

Ingredients

  • 260g plain flour
  • 200ml milk (semi-skimmed works fine but makes the muffins slightly drier — full fat gives a softer crumb)
  • 150g frozen or fresh mixed berries (blueberries alone also work beautifully)
  • 100g caster sugar
  • 75ml sunflower oil
  • 1 egg
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • To decorate the top: 2 tablespoons light brown sugar and 2 tablespoons flaked or rolled oats

Method

1. Preheat your oven to 170°C and line your muffin tray with the 12 cases.

2. Weigh all the dry ingredients (flour, sugar, baking powder and salt) directly into a large bowl.

3. In a separate bowl or jug, mix together the oil, milk and egg until well combined.

4. Pour the wet mixture into the dry mixture and stir well with a spoon until you have a smooth batter with no lumps. You can use an electric mixer for this if you prefer.

5. Once your batter is made, fold in the berries, making sure each one is coated in batter.

6. Spoon the mixture evenly between the 12 muffin cases.

7. Sprinkle the tops lightly with brown sugar and flaked oats, if using.

8. Bake for 35 minutes, or until golden on top.

9. Leave the muffins to cool a little on a wire rack before serving.
