Bell Inn Smokies are a warm, creamy smoked fish starter that’s simple to put together and always goes down well at the table. It’s a recipe we picked up years ago on a cookery course, and it’s stayed a firm favourite with both children and adults ever since. It’s a great one to have up your sleeve for a family gathering or a cosy dinner starter.
To make enough for 6 to 8 people as a starter, you’ll need 6 ramekins and the following:
Ingredients
- 1 large fillet of smoked fish (undyed smoked haddock works particularly well)
- 2 large tomatoes
- Small tub of cream (whipping or double)
- 150g / 4.5oz Gruyère cheese, grated
Method

- Preheat the oven to 180°C / 350°F / 160°C fan.
- Skin the fish and cut the fillet into small, bite-sized pieces, making sure to remove all bones.
- Skin the tomatoes and cut into small, bite-sized pieces. (To skin tomatoes easily, pierce or slash the skin in a few places with a sharp knife, then drop into boiling water for 1 minute. The skin should then peel away easily.)
- Place the uncooked fish into the ramekins and add the tomato pieces on top.
- Cover with the grated cheese.
- Add enough cream to each ramekin to cover the fish and tomatoes.
- Place the ramekins on a tray in the oven and bake until the cheese has melted and the fish is cooked through, usually 10 to 15 minutes.
- Serve hot from the oven with crusty bread for dipping.

What type of smoked fish works best for this recipe?
Undyed smoked haddock is a popular choice as it has a lovely, gentle smokiness without an overpowering flavour. Other smoked white fish fillets can work well too, as long as they’re skinned and boned before cooking.
Can I make Bell Inn Smokies ahead of time?
You can prepare the ramekins in advance — layering the fish, tomato and cheese — and keep them chilled until you’re ready to bake. Add the cream and pop them in the oven just before serving so they come out warm and fresh.
What should I serve with this starter?
Crusty bread is perfect for mopping up the creamy sauce. A simple side salad also works well if you’d like something lighter alongside it.
Can I use a different cheese?
Gruyère melts beautifully and adds a lovely nutty flavour, but a mature cheddar or similar melting cheese can be used if that’s what you have to hand.
