Looking for an easy Christmas treats recipe to bake with the kids this year? These Christmas star biscuits are a lovely one to add to your festive baking list. Sent in by Mykidstime parent Deirdre C, they’re simple enough for children to help with from start to finish, and they smell wonderful while baking thanks to the warm mix of cinnamon and spice.

They’re also a brilliant option if you’re looking for a homemade gift idea — a batch of these iced and wrapped up in a tin makes a thoughtful little present from kids to teachers, grandparents, or neighbours.

Ingredients

  • 175g softened butter
  • 125g soft brown sugar
  • ½ teaspoon mixed spice
  • 225g self-raising flour
  • 1 teaspoon ground cinnamon
  • Grated rind of 1 lemon
  • 50g chopped almonds
  • 25g digestive biscuits, crushed

Instructions

1. Cream the butter and sugar together until light and fluffy.

2. Sift the flour, mixed spice and cinnamon into the bowl, then add the lemon rind, chopped almonds and crushed digestive biscuits. Bring the ingredients together to form a firm dough.

3. On a lightly floured work surface, roll out the dough to about 8mm thick and cut out biscuits using a star-shaped cutter.

4. Line your baking trays with parchment paper. Place the biscuits on the trays and chill in the fridge for 10 minutes.

5. Bake at gas mark 4 (180°C/350°F, or 160°C fan) for 15–20 minutes, until golden brown.

6. Leave the biscuits on the tray for a few minutes to firm up, then transfer to a wire rack to cool completely.

7. Store in an airtight tin — if they last that long!

These biscuits freeze well, so it’s easy to make a batch ahead of the festive rush. They also take well to icing and decorating, so let the kids go a little Christmassy with their toppings.

Can I make the dough ahead of time?

Yes — the dough can be made a day or two in advance and kept chilled in the fridge, wrapped well, until you’re ready to roll and bake.

Can these biscuits be frozen?

Yes, they freeze well either baked or as unbaked dough. If freezing the dough, let it thaw in the fridge before rolling and cutting.

Can I swap the almonds for something else?

If you need a nut-free option, you can leave the almonds out or replace them with extra crushed digestives. The texture will be slightly softer, but they’ll still taste great.

How long do they keep once baked?

Stored in an airtight tin at room temperature, they’ll keep well for several days.
