Here is Eloise’s Spiced Oatmeal Raisin Cookies Recipe from this year’s Best Christmas Cookie Recipes Competition:

Makes about 3 dozen or so cookies.

Ingredients

1 Cup butter, softened
1 Cup light brown sugar
1/2 Cup granulated sugar
2 Eggs
1 Teaspoon vanilla
1 1/2 Cups plain flour
1 Teaspoon bicarbonate of soda
1 Teaspoon cinnamon
1/2 Teaspoon ground cloves
1/4 Teaspoon nutmeg
1/2 Teaspoon salt
3 Cups oats
1 Cup raisins

Method

1) With your mixer or hand mixer, cream butters and sugars until well blended. Add brown sugar, sugar, eggs, and vanilla. Mix until smooth. In another bowl, combine flour, spices, bicarbonate of soda, and salt. Add to the butter mixture and mix until combined. Add oats and raisins and mix until combined. Chill dough in the fridge for at least 2 hours.

2) Preheat oven to 170C, line baking tray with baking paper

3) Form dough in to ping pong ball size balls and place on trays about 1 1/2 – 2 inches apart

4) Baked 8 – 10 minutes. They’ll be nice and soft. If you prefer crunchy cookies bake for about 10 – 12 minutes.
