Recipes For Picnic Food
Chicken Drumsticks with Lime & Ginger
Summer time and the cooking is easy (or at least it should be!) This recipe for chicken drumsticks with lime and ginger is delicious and really quick to throw together, either hot as part of a barbeque or cold to take on a picnic.
Marinade the chicken legs in a Ziploc bag or bowl and every few hours turn it and massage the marinade into the meat before roasting or grilling.
Homemade Sausages
Most children love sausages, as do adults, however we can be concerned about the ingredients used in commercial sausages. These Homemade Sausages taste delicious and only take a few minutes to prepare.
Portable Potato Salad
Potato salad is yummy for picnics, but for a variation try this portable potato salad made from a leftover ham dinner! Put the dressing in the bottom of the jar before filling it and to layer it with the meat at the bottom, then the vegetables on top. Then when you get to your destination, give your jar a shake to mix the dressing and all the ingredients!
Lemonade
You can make stock syrup and keep it in the fridge, and easily make a big jug of lemonade with lemons and an orange.
This Homemade Lemonade recipe is lovely for picnics, add some ice cubes and then keep it cool in a thermos flask while you transport it.
Fruit for Your Picnic
You need fruit that’s easy to transport and easy to eat. I like to pack up some:
- watermelon slices
- strawberries
- frozen grapes (they’ll thaw on the way and be nice and cool)
- apple slices (squeeze lemon to keep from going brown)
- satsumas or tangerines
Chocolate Chip Cookies
Emma’s Chocolate Chip Cookies are just like the real sticky cookies you get in the States. Keep a roll of the dough in the fridge and just cook it as you need it.
