Glazed Carrots

Glazed carrots are one of those side dishes that never go out of style. They’re quick to make, use simple ingredients you probably already have in the kitchen, and taste far more special than the short prep time suggests. Best of all, you can cook them while your meat is resting, so they slot neatly into your dinner routine without any extra fuss.

Here’s how to make them.

Ingredients

  • 1lb/450g carrots, washed, peeled and sliced
  • A thin slice of butter
  • 4 fl oz/100ml water
  • Pinch of salt
  • Pinch of sugar

Method

Put the carrots into a saucepan with the butter, water, salt and sugar and bring to the boil. Cover the saucepan with a lid, reduce the heat and simmer until the carrots are tender.

The water should be absorbed by the carrots as they cook. If there’s still liquid left in the pan once the carrots are tender, remove the lid, increase the heat and cook for a minute or two until the water has evaporated. Keep a close eye on the pot at this stage, as the last bit of liquid can cook off very quickly.

Stir the carrots well so they’re evenly coated in the buttery glaze, then serve straight away.

  • Slice the carrots evenly so they cook at the same rate.
  • If you like a touch more sweetness, a slightly larger pinch of sugar works well without making the dish taste like dessert.
  • These carrots pair nicely with roast dinners, but they’re just as good alongside a simple midweek meal.

Can I make glazed carrots ahead of time?

You can peel and slice the carrots in advance and keep them in the fridge until you’re ready to cook. It’s best to cook them just before serving so they stay glossy and don’t lose their glaze.

What type of carrots work best?

Ordinary whole carrots, peeled and sliced, work well. Baby carrots can also be used if you prefer, though you may need to adjust the cooking time slightly as they’re often smaller and cook faster.

Can I double the recipe for a larger family?

Yes, simply increase the quantities in proportion. Use a wide enough pan so the carrots cook evenly, and keep an eye on the liquid towards the end of cooking.
