This pea and mint soup is one of those recipes worth keeping on hand all year round. It comes together quickly, and because it’s made from frozen peas, there’s rarely a need for a special shopping trip. It’s a great one for filling flasks too — perfect for kids heading to school or adults heading to work with lunch already sorted.

Serves 6–8
Ingredients
- 2 slices of bacon, trimmed of fat and cut into small pieces
- ½ oz/15g butter
- 2 medium spring onions, chopped
- 1½ lbs/675g fresh or frozen peas
- A sprig of mint
- 1½ pints/900ml chicken stock, preferably homemade
- Salt & pepper, to taste
- A pinch of sugar
To garnish: a little chopped fresh mint, and a drizzle of cream if you like.
Method
1. Melt the butter and sweat the bacon for five minutes, then add the spring onion and cook for a further minute or two.
2. Add the peas, mint and stock. Season with the salt, pepper and sugar, and cook for 5 minutes.
3. Once the peas are tender, the soup is ready to blend. Blend until smooth, then return to the saucepan to reheat gently — try not to let it boil, as this can dull the colour.
4. For the best colour and flavour, serve immediately, garnished with fresh mint and a swirl of cream if using, alongside some good bread.
