- 50g (2oz) goats cheese
- Crusty bread slices

1. Heat the oil in a large pan and fry the shallots and chilli for a minute.
2. Add the beans, tomatoes, chilli sauce, stock and most of the thyme.
3. Season and cook on a medium heat for a few minutes, until the tomatoes start to break down and the stock reduces slightly.
4. Toast the bread.
5. Spoon the bean mixture onto the toast, then crumble over the goats cheese and scatter the remaining thyme leaves on top.
Tip: if you add a third tin of beans to the mixture, you’ll have enough leftovers for lunch the next day — perfect for busy weeks when you want one cook, two meals.
