This Easy and Creamy Thai Green Chicken Curry is Divine!

Creamy Thai green chicken curry is such a warming, delicious dinner – and it tastes just as good the next day if you’re a fan of leftovers.

If your family hasn’t tried curry before, this is a great one to start with. It’s mild, fragrant and full of flavour without being fiery, and it’s easy to get the kids involved in the kitchen too. Letting them help measure, stir or chop the veg makes them far more likely to actually eat it once it’s on the table.

Easy Thai Green Chicken Curry

This Thai green chicken curry is a lovely way to introduce children to warm spices without any real heat. If your family does like things spicier, just add some chopped fresh or dried chilli to taste.

Green vegetables work beautifully here, so take your pick from green beans, peas, spinach, broccoli, mange tout, or whatever you have to use up in the fridge.

Ingredients:

  • Olive oil
  • 2 tbsp Thai green curry paste
  • 2–3 garlic cloves, crushed
  • Thumb-sized piece of fresh ginger, grated
  • ½ a red chilli, deseeded and finely chopped (optional)
  • 500g chicken breast, chopped
  • 4–6 spring onions, chopped
  • 100g green beans
  • 1 tin coconut milk
  • 60g frozen peas
  • Rice, to serve

Method:

1. Heat some oil in a large pan and add the Thai green curry paste to release the flavours. After a minute of stirring, add the garlic, ginger and chilli (if using).

2. Add the chopped chicken and stir to coat in the paste. Cook for 4–5 minutes, then add the spring onions, green beans and peas.

3. Pour in the coconut milk and stir to combine all the flavours.

4. Bring to a simmer and leave to cook for about 20 minutes, until the chicken is cooked through.

5. Serve on a bed of rice.

A few tips for making it your own

  • Swap the chicken for firm tofu or prawns if you want to mix things up.
