This fresh, simple guacamole recipe is the kind of thing you’ll find yourself making again and again. It’s so versatile that it works just as well spooned over a cooked breakfast as it does piled into lunchtime wraps or served alongside fajitas for dinner.

Beyond the classic pairing with your favourite Mexican-style dishes, this guacamole is brilliant stirred through wraps to give any filling a real flavour boost, served with chopped vegetables for dipping, or spooned onto bacon, eggs and potato rösti for a weekend brunch.

Delicious Guacamole Recipe

Ingredients

  • 2 ripe avocados
  • 1 red chilli, deseeded and finely chopped
  • 1 small clove of garlic, roughly chopped
  • 1 tbsp chopped fresh coriander
  • Juice of ½ a lime (reserve the other half and add more if you like)
  • Salt and black pepper

Method

1. Peel and remove the stone from the avocados. Put all the ingredients, except the salt and pepper, into a blender and whizz until smooth.

2. Taste and add more lime juice, salt or pepper if needed. Let the guacamole stand for at least 15 minutes before serving so the flavours have time to develop.

Top tip: If you leave one of the avocado stones in the guacamole until you’re ready to serve, it helps stop the mixture turning brown.
