I recently rediscovered the delight that is a homemade Swiss roll — and it turns out it’s a delightfully easy bake to add to your family recipe box. It’s perfect for a family dessert or for unexpected visitors, as it’s ready in under an hour from start to finish.

Homemade Swiss Roll Recipe
Ingredients
- 3 large eggs, separated
- 3oz caster sugar
- 3oz self-raising flour
- Whipped cream
- Berries, jam, or icing
Method
1. Preheat the oven to 180°C / 375°F and line a Swiss roll tin roughly 9×13 inches.
2. Beat the egg whites until firm.
3. In another bowl, beat the egg yolks and caster sugar until pale.
4. Fold the flour and egg yolk mix carefully into the egg whites, then pour onto the tin.
5. Bake for 8–12 minutes, until firm to the touch. Turn out while warm onto a sheet of baking parchment dusted with caster sugar. Roll tightly in the parchment and leave to cool — this is what stops it cracking.
6. Once cooled, unroll and spread with whipped cream and chopped berries, simple jam, or a butter icing. Roll back up and serve.
A few things that help:
- Rolling the sponge while it’s still warm is the key step — a cold sponge is far more likely to crack.
- Dusting the parchment with caster sugar stops the sponge sticking as you roll it.
- Don’t overbake — the sponge should spring back when lightly touched, and it firms up further as it cools.

Can I make a Swiss roll ahead of time?
Yes — once filled and rolled, keep it in the fridge, well wrapped, and it’ll be happy for a day or two. If you’re using a cream filling, keep it chilled until you’re ready to serve.
Can I freeze a Swiss roll?
An unfilled sponge freezes well — roll it up in parchment while still slightly warm, cool, then wrap and freeze. Add cream or jam filling after defrosting, closer to serving time.
Why did my Swiss roll crack when I rolled it?
This usually happens if the sponge has cooled down before rolling, or if it’s been baked a little too long. Rolling it warm, straight out of the oven, wrapped in the sugar-dusted parchment, is what keeps it flexible.
