A lot of people assume risotto is tricky, but it really isn’t once you know the trick: keep your stock hot, and make sure each ladleful is fully absorbed before you add the next. Rush it, and you’ll end up with something closer to rice pudding than risotto.

Easy Mushroom Risotto Recipe
Serves 4
Ingredients
- 1 large onion, finely chopped
- A thick slice of butter
- 1 glass of white wine
- 1 tbsp fresh thyme
- 4 large field mushrooms, finely chopped (or 4–5 button mushrooms per person)
- 500g Arborio rice
- 1 litre vegetable or mushroom stock
- 200g crème fraîche
- 1 tbsp parsley, chopped
- 2–3 tbsp grated Parmesan
Method
1. Heat your stock in a separate saucepan and keep it at a gentle simmer throughout. If you’re not keeping the meal vegetarian, chicken stock works well too.
2. In a large pan, gently sauté the onion and mushrooms in the butter over a medium heat. Don’t let the onion colour — you want it soft and translucent.
3. Once the onion is transparent, add the rice and stir gently so each grain gets coated in the butter.
4. Add the white wine and thyme, and let the wine reduce by about half.
5. Add the first ladle of hot stock. Stir until it’s fully absorbed before adding the next ladle. Take your time here — this patient, one-ladle-at-a-time stage is what gives risotto its signature creamy texture.
6. Keep adding stock, one ladle at a time, stirring frequently, until the rice is tender but still has a slight bite (usually 18–20 minutes).
7. Once all the stock has been absorbed and the rice is cooked, take the pan off the heat. Stir through the crème fraîche, chopped parsley and grated Parmesan until the risotto turns beautifully creamy.
8. Season to taste and serve immediately, with a little extra Parmesan grated on top if you like.
