Stuck for healthy breakfast ideas that feel a bit more exciting than the usual toast or cereal? This bacon and egg tower is a fun one to try at the weekend — it’s simple to make, packed with protein, and looks impressive enough to make breakfast feel like a bit of an occasion.

Ingredients

  • Coconut oil
  • 3 bacon medallions
  • 1 egg
  • 20g feta cheese
  • 4 asparagus spears

Method

  1. Fry the bacon medallions, egg and asparagus in 1 tsp of coconut oil.
  2. Once everything is cooked, start building your tower.
  3. Lay out one bacon medallion as your base.
  4. Layer with asparagus and feta cheese, repeating until you reach the top.
  5. Finish with the egg on top. Take a moment to admire your tower — then dig in!
