Stuck for family dinner ideas again? This jumbo sausage roll with spicy beans is one of those recipes that looks like it took effort but is actually a brilliant shortcut. It uses ready-rolled puff pastry and a jar of salsa to do most of the work, so you get a proper homemade dinner without a long list of jobs.

It’s a firm favourite in our house — hearty, a little spicy (you can dial that up or down), and easy to get on the table on a busy weeknight.

Jumbo Sausage Roll with Spicy Beans

Ingredients

  • 400g sausagemeat, or a pack of 8 sausages
  • 2 tbsp dried mixed herbs
  • 300g jar hot salsa dip
  • 1 egg, beaten
  • 375g ready-rolled puff pastry sheet
  • 3 x 400g cans cannellini or haricot beans (or a mixture), drained
  • 400g can chopped tomatoes
  • 1 chilli, thinly sliced (deseeded if you don’t like it too hot)

Method

  1. Heat the oven to 200C/180C fan/gas 6 and line a baking tray with baking parchment or foil.
  2. Remove the sausages from their skins and mix together the sausagemeat, herbs, half the jar of salsa and half of the beaten egg until well combined.
  3. Unroll the pastry sheet on your baking tray. Pile the sausage mixture along the longer side of one half of the pastry, leaving a gap of about 4cm around the edge.
  4. Brush a little of the remaining egg around the edges, then fold the pastry over the filling. Press the edges together with a fork and score a few air holes through the top with a knife to let the steam escape. Brush with the rest of the egg and bake for 40 minutes.
  5. Meanwhile, add the beans, chopped tomatoes, the rest of the jar of salsa, and salt and pepper to a saucepan and cover with a lid. Simmer for 20 minutes, or until the sauce is thick and clings to the beans.
  6. If your family isn’t keen on spice, leave out the chilli.
  7. Serve the sausage roll sliced, with the spicy beans and some steamed or sautéed greens — kale, spinach or green peas all work well.

You can prepare the sausage mixture and assemble the sausage roll a few hours ahead, then keep it covered in the fridge until you’re ready to bake it.

Can I freeze the sausage roll?

Yes, you can freeze it unbaked, well wrapped, and bake it from frozen (allowing extra time), or freeze cooked slices and reheat thoroughly until piping hot.

What can I use instead of sausagemeat?

A pack of good-quality sausages works just as well — simply squeeze the meat out of the skins before mixing with the herbs and salsa.

How do I make it less spicy for younger children?

Leave out the chilli and use a milder salsa dip in place of the hot one. You can always add chilli flakes or hot sauce to individual portions for adults.
