Fruit & Nut Cocoa Discs Recipe
No oven needed — just mix, press, chill and cut. It’s a great one for little hands.
Ingredients
- 1/4 cup roasted sunflower seeds
- 1/4 cup roasted pumpkin seeds
- 1/4 cup dried raisins or cranberries
- 1/4 cup desiccated coconut
- 1 tbsp cocoa powder
- 1/3 cup barley malt or rice syrup
Method
1. Put all the dry ingredients in a bowl.
2. Warm the syrup in a small saucepan.
3. Stir the syrup into the dry ingredients and mix well.
4. Transfer to a cutting board. With wet hands, press down into a square and allow to set in the fridge.
5. Using a cookie cutter, cut into circles or shapes of your choosing.
6. Store in a glass container.
