Is there anything better than warm, melt-in-the-mouth chocolate brownies? I’ve been using this recipe for years, and other parents always ask for it whenever there’s a party on. I hope you enjoy it as much as we do!
When you make these brownies, the most amazing smell fills the kitchen — they’re completely irresistible. The biggest challenge you’ll have is stopping at just one!
Melt In The Mouth Chocolate Brownies
This recipe makes approximately 15 brownies.
Ingredients
- 150g dark chocolate
- 150g butter (unsalted works best)
- 3 large eggs
- 225g caster sugar
- 1 teaspoon vanilla extract
- 100g plain flour
- Pinch of salt
- 125g dried fruit or nuts (optional)
Method
- Heat the oven to 180°C.
- Melt the butter and chocolate together over a pan of simmering water, making sure the bowl doesn’t touch the water. Once melted, leave aside to cool.
- Beat the eggs, sugar and vanilla together using an electric mixer until well combined.
- Once the chocolate mixture has cooled, add in the egg mixture and beat again.
- Sieve in the flour and salt, then beat until smooth with no lumps.
- Fold in the dried fruit and/or nuts, if using.
- Pour the mixture into a well-greased baking tray lined with parchment paper that overhangs the sides slightly.
- Smooth the top so it’s even, then bake for 20 to 25 minutes. They’re ready when the top has formed a crust and started to crack.
- Remove from the oven and leave to cool in the tin for 30 minutes, if you can wait that long!
- Once cooled, cut into squares and lift out using the overhanging parchment paper.
- Peel away the paper and tuck in!

How do I know when the brownies are done?
Look for a crust forming on top that has started to crack slightly. The centre should still be soft and fudgy underneath — that’s what gives you the melt-in-the-mouth texture.
Can I freeze these brownies?
Yes, once fully cooled, brownies freeze well in an airtight container. Let them defrost at room temperature before serving.
Can I leave out the dried fruit or nuts?
Absolutely. The dried fruit and nuts are optional, so you can leave them out entirely or swap in your family’s favourite mix-ins, like chocolate chips or chopped nuts.
Why line the tin with overhanging parchment paper?
It makes lifting the brownies out of the tin much easier once they’ve cooled, so you get neat squares without them sticking or breaking apart.
