A work colleague once brought back a waffle iron from a trip to Norway and invited me over to try fresh, homemade waffles straight off it. That was it — I was hooked. My own waffle iron has been well used ever since, and this is the recipe I always come back to: my trusted Best Ever Easy Waffle Recipe.
It’s quick to put together, uses ingredients most families already have in the cupboard, and the batter comes together in one bowl. Here’s how to make it.
Ingredients
- 200g plain flour
- 2 dessert spoons sugar
- ½ tsp salt
- 1 tsp baking powder
- 1 spoonful melted butter
- 300ml milk
- 2 eggs
- 1 tsp cardamom
- Icing sugar and other toppings, to serve
Method
1. Put all the ingredients into a bowl and mix until smooth. That’s it — it really is that easy.
2. Heat up your waffle iron. It helps to brush a little melted butter onto the iron before pouring in your first batch of batter. If this is your first time using the iron, don’t worry if the very first waffle doesn’t come out perfectly — it often takes one go to get the heat and timing right, and every batch after that will be better.
Tips for Success
- Grease the iron lightly before the first waffle, then you shouldn’t need to do it again for the rest of the batch.
- Keep waffles warm and crisp while you finish cooking the rest by laying them in a single layer on a wire rack rather than stacking them.
- Leftover waffles freeze well — pop them in the freezer once cooled, then reheat straight from frozen in a toaster or oven for a speedy breakfast another day.
Serving Suggestions
- Nutella or chocolate spread
- Sliced banana
- Sliced strawberries
- Defrosted frozen mixed berries
- Whipped cream
- A sprinkle of icing sugar on top makes them look extra pretty
Frequently Asked Questions
Can I freeze leftover waffles?
Yes. Let them cool completely, then freeze in a single layer before transferring to a freezer bag. Reheat from frozen in a toaster or oven until warmed through and crisp again.
Why did my first waffle stick to the iron?
This is completely normal, especially with a new or newly cleaned iron. A light coating of melted butter on the plates before you start helps, and the first waffle of a batch is often a bit of a test run — the rest usually come out perfectly.
Can I make the batter ahead of time?
The batter is quick enough to mix fresh, but if you’re short on time in the morning, you can prepare it the night before and keep it covered in the fridge. Give it a quick stir before using.
What can I use instead of cardamom?
Cardamom gives a lovely warm flavour, but you can leave it out or swap in a little cinnamon or vanilla extract if you prefer, or simply don’t have it to hand.
