This is the recipe we come back to again and again. It’s wonderfully simple, needs nothing more than a wooden spoon to bring together, and bakes in about 8 minutes flat — perfect for satisfying even the most urgent chocolate cravings.
The recipe is also easy to make your own. Try a mix of dark and white chocolate chips, stir in some chopped nuts, or sprinkle a little sea salt on top just before baking for a grown-up twist.

Chewy Chocolate Chip Cookies Recipe
Makes 16
Ingredients
- 175g self-raising flour
- 60g caster sugar
- 60g light muscovado sugar
- 1/2 tsp bicarbonate of soda
- A pinch of salt
- 115g unsalted butter, very soft
- 1/2 tsp vanilla
- 1 large egg, beaten
- 170g dark chocolate, broken into chunks
- 65g walnuts or hazelnuts, chopped (optional)
Method
1. Preheat the oven to 180C/375F. Grease or line 2 large baking sheets and set aside.
2. Add all the ingredients to a large bowl and combine with a wooden spoon.
3. Spoon out equal cookie dough balls (an ice cream scoop works well for consistency). Flatten the balls of dough slightly before baking for 8–10 minutes until lightly coloured.
4. Remove from the oven when the cookies are still soft — they’ll continue to firm up as they cool. Leave on the tray for several minutes before transferring to a wire rack to cool completely.
5. Cookies will keep in an airtight container for several days.
