Looking for a quick, easy and healthy recipe the whole family can enjoy? This homemade pot noodle is a much healthier alternative to the shop-bought version, and it’s genuinely fun to make with the kids.
Instead of a freeze-dried pot in a plastic cup, you build your own version in a jar with fresh vegetables, noodles and a simple soy and ginger flavour base. It’s quicker than you’d think, and the kids can get properly stuck in — grating carrots, measuring noodles, and giving everything a good stir.
This version is far more nutritious than the shop-bought kind, with a lot less salt, and the fresh vegetables add a satisfying crunch that the instant version just can’t match.

Homemade Pot Noodle Recipe
Ingredients (per person)
- 2 spring onions
- 1 carrot, peeled, topped and tailed
- 1 teaspoon ginger & garlic paste
- 1 teaspoon dark soy sauce
- A cupful of vermicelli rice noodles
- A handful of frozen sweetcorn
- A handful of frozen peas
- Boiling water
Method
1. Boil a kettle of water. Peel and chop the spring onions. Grate the carrot into a chunky shred.
2. Put the ginger and garlic paste into a large jar, followed by the soy sauce, noodles, peas, sweetcorn and grated carrot. Once the kettle has boiled, pour over with hot water up to 3/4 level. Stir well.
3. Loosely cover the jar using the lid for 30 seconds. If you’d like to add some protein, this is the point to stir in shredded omelette, leftover roast chicken, ham, or fresh beans. Serve and enjoy.

It’s best assembled fresh so the noodles and vegetables keep their texture, but you can prep the chopped vegetables in advance and store them in the fridge, then just add the noodles and boiling water when you’re ready to eat.

Absolutely — this recipe is very flexible. Try shredded cabbage, mangetout, baby corn or grated courgette depending on what you have to hand or what your kids prefer.

Yes, with supervision. Younger children can measure ingredients and stir the jar once it’s cool enough to handle, while an adult should always manage the boiling water and any hot pans.
