Homemade pancakes are one of those recipes every family should have on hand — quick to make, always popular, and endlessly adaptable to whatever toppings your kids love that week. This easy pancake recipe is our go-to for lazy weekend mornings or a fun midweek treat.

These are American-style pancakes: thick, fluffy and just sweet enough, ideal for stacking high with maple syrup and crispy bacon, fresh berries, chocolate chips, or whatever your family fancies. Make them smaller and they’re brilliant in lunchboxes or as an after-school snack too.

Quick and Easy Pancake Recipe

Delicious served with crispy bacon and maple syrup. Makes 8-10 pancakes.

Ingredients

  • 150g self-raising flour
  • 1 tbsp caster sugar
  • 1 egg, lightly beaten with a fork
  • 150ml milk
  • Butter, for frying

Method

1. Sieve the flour into a bowl and combine with the sugar.

2. Add the milk to the whisked egg.

3. Make a well in the centre of the flour and add the milk and egg mixture. Using a whisk, gradually combine the liquid with the flour, working from the inside out.

4. Your batter will be quite thick. Pour it into a jug so it’s easy to pour onto the pan — or simply put all the ingredients into a blender and whizz them together, which is often the easiest method.

5. Heat your frying pan and add a little butter, keeping the heat at medium. Pour small amounts of batter from the jug onto the pan. When you see bubbles forming on the top of each pancake, they’re ready to turn.

6. Give the pancakes another minute or two on the other side, then serve with crispy bacon and maple syrup.
