Chicken and Veggie Rice
When I need a quick and simple dinner, this is one I come back to again and again. My kids love it, and it’s easy to vary the veg and the meat depending on what’s in the fridge.
Ingredients
- 250g diced cooked chicken (leftover from a roast works well)
- 250g diced Polish sausage
- 2 cups easy cook rice
- 1 litre chicken stock
- 1 onion
- 100g frozen peas
- 100g frozen sweetcorn
- Salt and pepper
Method
1. Chop your onion and fry gently in some olive oil until softened.
2. Add the chicken and sausage.
3. Add the rice and stir until the rice is coated.
4. Stir in the frozen veg.
5. Add the chicken stock, starting with about three-quarters of it and keeping the rest aside until you see how much the rice needs.
6. Add a pinch of salt (not too much, as the stock will already be salty) and a few grinds of black pepper.
7. Bring to the boil, then simmer for 20 minutes, checking and stirring occasionally. If the rice needs more liquid, add the remaining stock and stir.
8. After a further ten minutes of simmering, check that the rice is cooked and adjust the seasoning if needed.
9. Serve with a green salad.
My family loves the combination of chicken and Polish sausage, but you can vary the meat depending on what you have — it’s a great way to use up leftover roast meat.
You can also swap the vegetables. If you’re using fresh chopped vegetables, such as peppers or courgettes, add them in after the onion and fry for a couple more minutes to soften before adding the chicken and sausage.
