Chocolate Refrigerator Cake Recipe
Ingredients:
- 150g (5½ oz) bar of dark chocolate
- 200g (7oz) bar of milk chocolate
- 175g (6oz) butter, cut into pieces
- 100g (3½oz) golden syrup
- 200g (7oz) packet digestive biscuits
- Large handful of dried cranberries, marshmallows or nuts (add whatever you think will taste best)
Method:
1. Line an 8 inch round tin with greaseproof paper.
2. Put all the chocolate, butter and syrup into the microwave and melt on low for 2 minutes, or melt it the old-fashioned way in a bowl over a pot of gently simmering water.
3. Crush the biscuits and add to the melted chocolate mixture, along with your dried fruit, nuts, marshmallows or whatever extras you’re using.
4. Pour into the tin and leave in the fridge until set. This takes about 3 hours.

How long does chocolate refrigerator cake keep?
Stored in an airtight container in the fridge, it will keep well for about a week.

What can I use instead of digestive biscuits?
Any plain, crumbly biscuit works well, such as rich tea or a similar shortbread-style biscuit. Just crush them the same way.
