The Easiest Quesadilla Recipe that the Kids Will Love

Quesadillas are a Mexican classic, usually made with a corn or flour tortilla filled with grated cheese and warmed through until melted and golden. This is our easiest quesadilla recipe that the kids will love, and it comes together in just a few minutes. It’s perfect for a quick after-school snack, and a great way to use up any leftover cooked chicken, pork or beef.

Ingredients

  • chicken bacon quesadillasLarge corn or flour tortillas (at least 2)
  • Grated cheddar cheese
  • Fillings of your choice: our favourites are diced spring onions, diced tomatoes, avocado and cooked chicken pieces. You could also try sweetcorn, olives, mushrooms, peppers, cooked beef or pork.

Method

  • Place a large non-stick pan on a low to medium heat.
  • Add a tortilla to the pan.
  • Sprinkle on grated cheese, then add the rest of your fillings in a thin, even layer.
  • Add a little more grated cheese on top, then cover with a second tortilla.
  • After about 20 seconds, carefully flip the tortilla.
  • Keep flipping every so often for about 2 minutes, checking that the cheese has melted and the filling is warmed through. Watch it closely so it doesn’t catch or burn.

Once cooked, cut into quarters and serve with sour cream or natural yoghurt, homemade guacamole and salsa.

Quesadillas are best cooked fresh so the tortilla stays crisp and the cheese is gently melted, but you can prepare your fillings in advance and simply assemble and cook when you’re ready to eat.

Either corn or flour tortillas work well. Flour tortillas tend to be softer and easier for younger children to eat, while corn tortillas give a slightly firmer bite.

Can I freeze leftover quesadillas?

Cooked quesadillas can be cooled and stored in the fridge for a day or two. Reheat gently in a pan rather than a microwave to keep the tortilla from going soggy.

What can I use instead of cheddar cheese?

Any melting cheese works well, such as mozzarella or a Mexican cheese blend, if you’d like to vary the flavour.
