Fajitas are a hugely fun family dinner, and it’s one I get asked to make again and again. These easy chicken fajitas are packed with flavour, and the best part is that everyone gets to build their own combination of fillings and toppings. Messy? Yes. Delicious? Absolutely.

It’s not just the taste that makes this recipe a winner in our house — there’s plenty of hands-on, make-it-yourself fun involved too, which is probably why it gets requested so often!

It’s Time for Chicken Fajitas

The great thing about fajitas is that you can add whatever you have to hand — peppers, baby corn, mange tout, and so on — and you can easily swap the chicken for beef, turkey or extra veggies. Got some leftover roast pork or beef? Use that instead and change the whole meal up.

Ingredients

  • Olive oil
  • 1 red onion, halved and sliced thinly
  • 2–3 garlic cloves, crushed
  • 1 red chilli, finely chopped (optional)
  • 3–4 chicken breasts, cut into strips
  • 2 tsp smoked paprika
  • ½ tsp ground cumin
  • 1 red pepper and 1 green pepper, sliced into strips
  • 6–8 soft tortilla wraps
  • Topping ideas: sour cream, grated cheese, fresh coriander, guacamole, salsa, sliced jalapeño

Method

1. Heat some oil in a pan over a medium heat and sauté the onion until softened. Add the garlic and chilli (if using) for a further minute, then add in the chicken strips.

2. Season the chicken and add the spices, stirring well to coat.

3. Once the chicken has browned, add the pepper strips and cook for a further 5–8 minutes, until the chicken is cooked through.

4. While the chicken cooks, get all your toppings ready for serving. Let everyone build their own — layering chicken and toppings into the tortilla wraps, then wrap tightly and enjoy!

  • Warm the tortilla wraps briefly before serving — it makes them easier to fold and roll.
  • Set toppings out in small bowls so everyone can help themselves. It keeps little hands busy and cuts down on fussy dinner complaints.
  • Leftover fajita filling reheats well and makes a great next-day wrap or salad topper.
