Stuck in a dinnertime rut? This one-pot Mexican chicken rice is exactly the kind of recipe busy parents need on hand. Using just a handful of ingredients you probably already have in the fridge and store cupboard, you can turn out a filling, flavourful family dinner in about 30 minutes — with only one pan to wash up afterwards.

This recipe uses chicken breasts, peppers, onions and rice, with a gentle warmth from ground spices. It’s easy to adjust for different tastes: swap the paprika for chilli powder if your family likes things spicier, or keep it mild and let everyone add their own toppings at the table.

One-Pot Mexican Chicken Rice

You can spice this up or tone it down depending on age and palates by swapping the paprika for chilli powder, or leaving it out altogether for younger or more sensitive eaters.

Serves 4

Ingredients:

  • 3 boneless, skinless chicken breasts
  • 1 red pepper
  • 1 onion
  • Rice for 4 people (easy cook long grain works well)
  • 1 tablespoon olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground paprika
  • 1 tsp dried oregano
  • 1 tin of mixed beans, drained
  • 100g frozen peas
  • 100g frozen sweet corn
  • 500ml chicken stock

Method:

1. Chop the onion and pepper and fry in a little olive oil over a medium heat until they soften, a few minutes.

2. Add the spices and fry for a couple of minutes.

3. Add the chicken and fry until cooked through, roughly 10–15 minutes, stirring off and on.

4. Add the rice and stir to coat.

5. Add the stock, mixed beans, peas and sweet corn. Start with around two-thirds of the stock and see how the rice cooks, adding more if it needs it.

6. Put the lid on and cook on a lower heat for 20 minutes, stirring halfway through. Add more stock at this point if the pan looks dry.

7. Check whether the rice is cooked and give it a few extra minutes if needed.

8. Feel free to swap in whatever vegetables your kids like — courgette and mushrooms both work well here.

A grated carrot and sliced beetroot salad with balsamic vinegar and olive oil makes a lovely side, though a simple green salad works just as well. For anyone who likes it spicier, a spoonful of salsa on top is a nice finishing touch.
