#1. Delicious Almond Crepes
Ingredients:
- 150g whole grain flour
- 50g ground almond
- 2 eggs
- 200ml milk
- 15ml oil or melted butter
Method:
- In a large bowl, whisk the eggs and milk and add the oil or butter. Then, add the almonds and the flour and whisk well.
- Keep the mixture in the fridge for an hour.
- Heat a nonstick pan over medium heat, put a little butter or oil in it, and then spread a spoonful of the batter on it.
- Cook until golden brown and flip them. Cook for about 30 seconds.
- Enjoy the crepes with toppings like honey and fresh fruits of your choice.
#2. Special Almond & Oat Cookies
Ingredients:
- 200g ground almonds
- 100g oats
- 140g light brown sugar
- 40g soft butter
- 100ml water
- 1/2 teaspoon bicarbonate of soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon powder
Method:
- Preheat oven to 160 degrees.
- Boil the water and add the brown sugar to it. Mix it.
- Add all the remaining ingredients to the sugar and water mixture and mix well.
- Keep the dough in the fridge for half an hour. Then shape them into flat round cookies.
- Bake them on greaseproof paper for 15 to 20 minutes or until they are golden brown.
- Store them in an airtight container.
#3. Almond Tart
Ingredients:
- 170g butter
- 300g sugar
- 200g plain flour
- 100g ground almonds
- 2 eggs
- 1 tablespoon of slivered almonds
- 1 teaspoon almond extract
Method:
- Beat the sugar and butter until the mixture gets light and creamy. Add the eggs and the almond extract and mix well.
- Next add the flour and almonds and again mix well.
- Line a 9-inch tin with parchment paper at the bottom and butter and dust flour it.
- Pour the batter into the tin and top it with the almond slivers. Bake in a preheated oven for about 30 to 35 minutes till the almonds on top are light brown.
- Cool it before slicing it.

#4. Savoury Almond & Carrot Muffins
Ingredients:
- 100g almond flour / almond meal
- 100g grated carrots
- 3 large eggs
- 60ml of any flavorless oil
- 1 tablespoon honey
- 1/4 teaspoon cardamom powder
- 1/4 teaspoon salt
- 1/2 teaspoon bicarbonate of soda
Method:
- Preheat the oven to 160 to 170 degrees. Grease the muffin tins and dust with flour.
- Whisk the eggs, add the oil and honey, and mix well.
- Add the rest of the ingredients and fold it in.
- Pour it into the prepared tins and bake for 10 to 15 minutes, or till done.
- A skewer inserted into the muffin should come out clean when done.
5. Toasted Almond Meringues
Ingredients:
- 3 large egg whites
- 180g of powdered sugar (grind sugar in a blender and sift)
- 1/4 teaspoon salt
- 50g ground almonds. You can dry roast almonds and coarsely grind them if you want.
- 1/2 teaspoon vanilla extract
Method:
- Preheat the oven to 140 degrees.
- Clean the inside of a large glass or steel bowl with half a lime or a lemon.
- Add the egg whites and salt and using an electric mixer, whisk on low speed for 2 to 3 minutes.
- Continue to whisk, adding a spoon of powdered sugar at a time till the mixture becomes stiff and glossy.
- Fold in the almonds and the vanilla extract.
- Drop spoonfuls of this mixture on a baking tray lined with greaseproof paper about an inch apart. Bake for about 30 minutes or till the meringues are done.
