For Each Cucumber Christmas Tree You Will Need:

  • 1 oat biscuit
  • 1 thin slice of cucumber
  • 1 piece of carrot or cheese
  • 1 cocktail stick/skewer
  • Vegetable peeler

Instructions

  1. To create your cucumber Christmas tree, use your vegetable peeler to cut a full-length strip of cucumber.
  2. Fold this strip into a fan shape.
  3. Push your skewer through the centre and gently pull out the cucumber until it resembles a tree.
  4. Gently stick the skewer into your oat biscuit to form the base.
  5. Create a star for the top using a small piece of carrot or cheese.
  6. Serve and enjoy!

Handy Tips

  • A vegetable peeler with a straight, wide blade gives the longest, most even cucumber strips.
  • If the cucumber strip splits while you’re folding it, just start again with a fresh strip — thinner strips are easier to fan out.
  • These are best assembled just before serving, as the cucumber can go a little watery if it sits too long.
  • Swap the oat biscuit for a cracker if that’s what you have in the cupboard.

Frequently Asked Questions

Can I make cucumber Christmas trees ahead of time?

They’re best made close to serving time, as the cucumber can release a little moisture the longer it sits. If you do want to prep ahead, cut and peel your cucumber strips and store them in the fridge, then assemble the trees just before your party or lunchbox goes out.

What can I use instead of an oat biscuit?

Any small, sturdy biscuit or cracker will work as the base — just make sure it’s firm enough to hold the skewer steady.

What can I use for the star on top?

A thin star-shaped slice of carrot or cheese both work well. You could also try a small star-shaped cutter if you have one, to make the shape neater.

Is this recipe suitable for younger children to help with?

Younger children can help fold the cucumber fan and choose their star topper. The peeling and skewering steps are easier handled by an adult or an older child, as the skewer point needs a bit of care.
