Springtime is when you will often find swathes of wild garlic in forests and woods. They have long shiny vivid green leaves with white starlike flowers. Just rub the leaves gently and you will smell the garlic smell. This Wild Garlic Pesto recipe is delicious with pasta or in soups or casseroles.

Ingredients

  • Olive oil
  • Pine nuts
  • Wild garlic leaves
  • Parmesan

Method

  1. Chop the wild garlic leaves roughly and grate the parmesan.
  2. Blend all the ingredients together.
  3. Store in a jar in the fridge, it keeps for a couple of weeks.
