Cracking Breakfast Recipes with Eggs
#1. Master the Dippy Egg
Master a classic dippy egg, so your kids can enjoy dunking their toast soldiers into the yolk. Simply place your eggs in a saucepan and cover with cold water to an inch above them. Bring the water to a rolling boil and remove the saucepan from the heat.
Cover it with a lid and take them out of the water after four or six minutes for a dippy egg. If you prefer them hard, leave them up to 15 minutes and enjoy!
#2. Perfect Poached Eggs
The secret to perfectly poached eggs is very fresh produce and adding a small dash of vinegar to the water.
- Bring the water to a gentle simmer and add a dash of vinegar
- Crack each egg into a small dish
- Create a whirlpool in the water with a wooden spoon
- Slowly tip your egg into the water
- Cook to your desired consistency
- Drain on kitchen paper
I like my poached eggs on brown toast, but if you want to get some greens in, serve it with spinach, avocado or asparagus.

Don’t get yourself into a scramble with this classic! For sublime eggs, you’ll need a pan and some butter. I use two eggs per person so my method is for two portions.
- Beat four eggs with a quarter cup of milk and seasoning until blended
- Heat a thick slice of butter in a large non-stick pan on medium heat
- When the butter has melted add the egg mixture
- Leave it for a minute until they begin to set then use a spatula to gently separate them
- Cook to desired consistency and serve immediately
Try them on a hot buttered muffin or add smoked salmon and snipped chives for a real breakfast treat.

Who doesn’t love an eggy omelette? This egg recipe uses three! My method will serve one and you’ll need your eggs to room temperature before starting.
- Gently whisk three seasoned, large eggs with a splash of milk
- Add a slice of butter to a non-stick pan and cook over medium heat until the butter has melted
- Pour the egg mixture onto the pan and spread out it to a single layer
- Continue to cook until the eggs start to set, use your spatula to spread it out, so everything cooks evenly
- Once set, add grated cheese, salt and pepper
- Gently fold it over and leave on the heat until the cheese has melted
- Serve it up

#5. Sunny-Side Up Eggs
Sunny-side up eggs was a regular on the breakfast table when I was growing up and they still put a smile on my face when I dish it up in the morning. For this recipe, you’ll need a good non-stick pan over a medium to low heat. Coat the bottom of the pan with vegetable oil and heat.
Crack your egg into the pan and cook until the white has set but the yolk is still runny, add on some chilli flakes or salt and pepper to taste. I love to serve mine up with guacamole as the flavours complement one another.

#8. Fluffy French Toast
Fluffy french toast screams it’s a Saturday morning and extra effort has been made for breakfast time. However, this recipe is actually really quick, so it’s all the reward without the work.
I like to add maple syrup on top and keep the egg mixture simple, but you could add vanilla, cinnamon, sugar or nutmeg to the eggs for additional flavour. I use sliced white bread, but any sliced bread works for this recipe.
Method (makes 4 slices of French Toast)
- Mix two eggs with four fl oz milk in a shallow dish
- Add your sliced bread, a slice at a time, and soak each piece
- Heat a large knob of butter in a non-stick pan over a medium heat
- Once the butter has melted, add your bread and cook on each side until golden brown
