Ingredients for Eggnog

  • 2½ cups full-fat milk
  • 1 cup double cream (heavy cream)
  • 2 cinnamon sticks
  • 3 medium free-range eggs
  • 3 drops vanilla extract
  • ⅓ cup white sugar
  • ½ cup rum and/or brandy (can be made without alcohol)
  • Grated nutmeg, to serve

Method for Eggnog

1. Heat the eggs, sugar, milk, and cinnamon sticks in a saucepan over a low heat, whisking continuously until the mixture thickens (this takes about 8 minutes).

2. Remove from the heat and stir in the vanilla extract, the alcohol (if using), and half of the cream.

3. Whip the remaining cream until thick.

4. Pour the warm egg mixture into heatproof glasses and top with the whipped cream.

5. Finish with a generous grating of nutmeg and serve while warm.
